Plum Coffeecake

My friend Jodi gave me a big bag of plums from her trees. I finally got around to trying something with them, and this is what I made. I wish I had a picture, but the plums were amazing. Not much to look at on the outside, but wow, deep red rich color inside. Just gorgeous. Plum Coffeecake Crumb Topping 8 medium sized plums, but I needed about 20 small ones 1 c. butter, softened 1 c. sugar 1 1/4 c. flour 2 tsp. baking powder 2 tsp. lemon peel 1/4 tsp. salt 4 eggs heavy cream, optional Prepare Crumb Topping and set aside. Slice plums if large or halve them if small; set aside. Preheat oven to 325. Grease and flour 13x9 pan. In large bowl, beat butter and sugar. Add flour, baking powder, salt, lemon peel, and eggs. Beat until smooth. Spread batter evenly in pan; top with plumbs. Pinch small pieces of crumb topping and sprinkle on top of plums. Bake 50 to 60 minutes or until top is golden and cake tests done. Raspberry Danish Coffee Cake

Either raspberry, blueberry, or sweetened cottage cheese/cream cheese mixture would be good in this. I used raspberry. I also cut it into two loaves, as it was too big for my baking sheet. Raspberry Danish Coffee Cake Dough: 3 1/2 c. flour 1/2 c. sugar 1/2 tsp. salt 2 pkgs. yeast (or 4 1/2 tsp.) 2/3 c. warm water 6 Tb. butter, softened 1 large egg Filling: 2 c. raspberry (or blueberry) jam Combine 1 c. flour, sugar, salt, and yeast. Beat in water and butter. Beat for 2 minutes more. Add egg and 3/4 c. flour; beat 2 minutes. Add remaining flour. On lightly floured surface, knead dough until smooth and elastic. Shape dough into ball. Place dough in large greased bowl. Cover and let rise until doubled in size. Punch down dough. Turn onto lightly floured surface; cover, and let rest 15 minutes. Overnight Coffee Cake

We always eat the same sort of menu on Christmas morning - fruit, fresh from stockings; little sausages, some browned and some wrapped up for pigs in a blanket; juice; and a bread of some sort. This year, the kids asked for a coffee cake. But I didn't want to take time to throw together a coffee cake when I could be with the family. So I found this recipe and put it together the night before. Then all I had to do was preheat the oven, wait the oven was ready, and pop this in. And it tasted great too. True Love Coffee Cake

From the book "101 More Things to do with a Cake Mix." True Love Coffee Cake 1 c. milk 1 envelope or 2 1/4 tsp. yeast 1 yellow or white cake mix 3 eggs 1/2 c. oil 1/2 c. applesauce Preheat oven to 350. Warm milk in microwave for 35-45 seconds. Mix yeast with warm milk. Stir in cake mix. Mix in eggs, oil, and applesauce. Let stand 5-10 minutes. Pour into greased 13 x 9 pan and set aside. For topping, combine 3/4 c. brown sugar, 1/2 c. flour, and 1/4 c. butter, softened. Mix together until crumbly. Sprinkle topping over batter. Bake 25-35 minutes. Serve warm.

Sundance Eggs

Sundance Eggs 2 flour torillas, taco size 4 eggs 1 ts. water 1/8 ts. salt 2 ts. butter 1/4 c. chopped onion 1 medium tomato, peeled, seeded and chopped 2 Tb. green chilies, chopped and drained 1/2 c. cheese 2 Tb. taco sauce or salsa 2 Tb. sour cream, optional Heat oven to 350. Wrap tortillas in foil; bake about 5 minutes or until warm and soft. In medium bowl, combine eggs, water and salt; beat well. Melt butter in medium skillet and add eggs. Cook until eggs are almost set. Remove from heat. Place warm tortillas on large ungreased cookie sheet. Top each tortilla with 1/2 of the eggs, onions, tomato, chilies, and cheese. Bake at 350 or until cheese is melted. Top each with taco sauce and sour cream. Serves 2.

Harvest Dinner Omelet

Today's recipes are a few for smaller crowds of 2 to 3 people. We used these when we were first married or only had Baby Ellen. Good for lunch too. Harvest Dinner Omelet 4 eggs 1/4 c. milk 1/8 ts. salt 1 Tb. butter 1/2 c. chopped zucchini or mushrooms 1/3 c. chopped tomato or ham 1 Tb. chopped onion 1/2 c. shredded cheese Combine eggs, milk, salt and pepper; beat well. Melt margarine in large skillet over medium-high heat. Pour egg mixture into skillet; reduce heat to low. Cook, gently lifting edges so uncooked portion flows underneath, until eggs are set but top is moist. Sprinkle other ingredients over eggs. With spatula, loosen edge of omelet and fold in half; transfer to serving platter. 2 to 3 servings.
